Raspberry pie
A fruit pie filled with fresh or frozen raspberries, thickened and baked in a pastry crust.

- Cakes, cookies, pastries and baked goods
Raspberries are soft and juicy and break down as they bake, so the filling needs a thickener such as cornstarch or tapioca and a full bubble in the center to set. Their seeds and tart flavor pair well with a buttery crust and a touch of lemon.
A lattice or crumb topping lets steam escape. Raspberries are often mixed with peaches, apples or rhubarb.
