Also called: dragées, Jordan almond

Sugar pearls come in many sizes, from tiny beads to large pearls, and are pressed into frosting or icing while it is still soft so they stick. They are popular on wedding cakes, piped borders and holiday cookies, where they add a neat, elegant look.

The related term dragée covers any candy with a hard sugar shell, including sugar-coated almonds. Because pearls are very hard, it is best to use them sparingly on soft desserts.
