Lattice
A top crust for a pie made by weaving strips of pastry over and under each other, leaving gaps that show the filling.

- Techniques and preparation methods
Also called: lattice top, lattice crust
Strips are cut with a knife or fluted pastry wheel, laid in one direction, then woven by folding back alternate strips and laying the cross strips one at a time. Keeping the dough cold makes weaving easier and the strips stay crisp.
The gaps let steam escape, which helps juicy fillings like cherry, berry and peach thicken. An egg wash and coarse sugar make the lattice shiny and golden.
