Classic shortbread dough uses just three ingredients, often in a simple ratio of one part sugar, two parts butter and three parts flour by weight. There are no eggs and no leavening, so the high butter content alone gives the cookie its short, sandy texture. Some bakers replace part of the flour with rice flour or cornstarch for extra crumbliness.

The dough is mixed only until it comes together, because overworking develops gluten and toughens it. It is pressed into a pan, rolled and cut, or shaped into rounds, then docked with a fork and often chilled. Shortbread is baked at a moderate temperature until just pale golden.
