Sablé
A rich, crumbly French butter cookie, similar to shortbread, whose name means "sandy" in French because of its fine, delicate texture.

Sablés are made from butter, sugar, flour and egg yolks, mixed only briefly so little gluten forms. The dough is often rolled into a log, chilled, coated in sugar and sliced, which gives neat rounds with a sparkly edge. Flavors include vanilla, lemon zest, chocolate and almond.
Sablé breton, from Brittany, is a thicker version made with salted butter and plenty of yolks. Its sturdy, buttery dough is also pressed into rings as a base for fruit tarts.
