Rice flour
A fine flour made from milled rice, gluten-free and used in baking, batters, and thickening.

- Baking ingredients and additives
Rice flour is flour made from finely milled rice. Because it contains no gluten, it is widely used as a wheat alternative and is a key ingredient in many gluten-free recipes, including bread, pasta, and cookies.
White rice flour, made from rice with the bran removed, is pale and fine with a slightly gritty feel, while brown rice flour keeps the bran and is darker and more nutty. Rice flour gives a tender crumb and a crisp finish, which is why it is also used in coatings, shortbread, and batters.
Because it lacks gluten's stretch, bakers usually combine it with starches or other flours for structure. It is different from glutinous or sweet rice flour, which is made from sticky rice and gives chewy results. Store it airtight in a cool, dry place.
