Also called: Rasagola, rasgulla, rasgullah, roshogolla
Rosogolla is made from chhena, a fresh cheese made by curdling hot milk with lemon juice or vinegar and draining off the whey. The chhena is kneaded until very smooth, rolled into small balls and cooked in boiling sugar syrup, where they swell and become light and spongy.
They are served chilled or at room temperature in their syrup. The sweet is popular across India, Bangladesh and the diaspora, and it is the base for related sweets such as ras malai, where the cheese is soaked in sweetened milk.
