Simple syrup
A syrup of sugar dissolved in water, usually equal parts, used to sweeten drinks and to brush cake layers so they stay moist.

- Baking ingredients and additives
Also called: sugar syrup, stock syrup
A 1:1 simple syrup is made by heating equal weights of sugar and water until the sugar dissolves. A 2:1 rich syrup is sweeter and keeps longer. Syrups can be infused with vanilla, citrus zest, herbs or spices while warm.
Brushing cake layers with syrup keeps sponge cakes and genoise moist. Simple syrup keeps about a month in the refrigerator.
