Puto is made from a batter of rice flour, or ground soaked rice, with sugar, water or coconut milk and a leavening agent. Traditional versions use slightly fermented rice batter, while many modern recipes use baking powder and wheat flour. The batter is poured into small cups or molds and steamed until risen and springy.
Puto is eaten as a snack or with savory dishes such as dinuguan, a pork stew. It is often topped with a slice of cheese, salted egg or grated coconut, and comes in many regional varieties and colors, including purple ube and green pandan. It is one of the best known Filipino kakanin, or rice-based sweets.
