A spiced custard pie made with pumpkin purée, eggs, sugar and milk or cream, traditional at American Thanksgiving.

The filling is a custard flavored with cinnamon, ginger, nutmeg and cloves. Many recipes use evaporated milk or sweetened condensed milk. The crust is often partly blind-baked first so it stays crisp.
Bake at about 350°F (175°C) until the edges are set and the center jiggles slightly, about 45 to 55 minutes. Cooling slowly helps prevent cracks.
