Also called: ground ginger
Ground ginger is warm and earthy and is the main spice in gingerbread and gingersnaps. Fresh ginger is brighter and more peppery; about 1 tablespoon grated fresh ginger roughly equals ¼ teaspoon ground, but they taste different. Crystallized ginger adds chewy, spicy bites to scones and cookies.
Ginger pairs well with molasses, pumpkin, pear, citrus and dark chocolate.
