Instructions

  1. Heat the oven to 425°F.
  2. In a large bowl, whisk the pumpkin puree, granulated sugar, pumpkin pie spice, eggs, evaporated milk, vanilla, and salt until completely smooth.
  3. Pour into the crust and bake for 15 minutes. Reduce the oven to 350°F and bake until the edge is set and the center jiggles slightly, 40 to 50 minutes more (the center should read about 175°F).
  4. Cool on a rack for 2 hours, then refrigerate until cold.
