Custard pie
A pie with a filling of eggs, milk or cream and sugar that bakes into a smooth, set custard inside the crust.

- Cakes, cookies, pastries and baked goods
Custard pies include plain egg custard, pumpkin, sweet potato, buttermilk and chess pies. The crust is often partly blind-baked first so it doesn't go soggy.
Bake until the edges are set and the center still jiggles slightly; the filling finishes setting as it cools. A knife inserted near the center should come out clean. Overbaking makes the filling crack or weep.
