Pistachios

Green, slightly sweet nuts from the pistachio tree, used in gelato, baklava, cannoli, cookies and pastries.

The best pistachios are a vivid green. Unsalted, shelled pistachios are used in baking; salted ones suit snacking and some savory dishes. Pistachio paste and pistachio cream are popular for fillings and gelato.

Chopped pistachios add color and crunch to baklava, cannoli ends and chocolate bark.
