A Sicilian pastry of crisp, fried pastry tubes filled with sweet, creamy ricotta.

- Italy
Also called: sicilian cannolo
The shells are made from a dough often flavored with wine or Marsala, rolled thin, wrapped around metal tubes and fried until blistered and crisp. The filling is drained, sweetened ricotta, sometimes mixed with mascarpone, chocolate chips or candied citrus.
Cannoli should be filled just before serving so the shells stay crisp. The ends are often dipped in chopped pistachios or chocolate chips.
