Pandan cake is a soft, airy chiffon cake popular in Indonesia, Malaysia and Singapore. Its green color and sweet, grassy, vanilla-like aroma come from the juice of pandan leaves, which are blended with water and strained, or from pandan paste. Coconut milk often replaces some of the liquid, adding richness.

Like other chiffon cakes, it uses oil and whipped egg whites, and it is baked in a tall tube pan and cooled upside down so it does not collapse. The result is very tall, springy and moist. It is usually served plain, cut into wedges, as an everyday treat with tea or coffee.
