Tiramisu
An Italian layered dessert of coffee-soaked ladyfingers and mascarpone cream, dusted with cocoa.

- Traditional and regional desserts
- Italy (Veneto)
Ladyfingers are dipped briefly in strong coffee, sometimes with a little liqueur, and layered with a cream of mascarpone, sugar and egg yolks, often lightened with whipped egg whites or cream. It is chilled for several hours so the flavors meld and it can be sliced, then dusted with cocoa just before serving.
Classic recipes use raw eggs. Many modern versions cook the yolks with sugar over a water bath first, like a sabayon, or use pasteurized eggs, which is the safer choice for children, pregnant guests and older people.
