Instructions

  1. In a large bowl, beat the mascarpone with half of the confectioners' sugar until completely smooth, about 1 minute.
  2. In a chilled bowl, whip the cold cream, remaining confectioners' sugar, salt, orange zest, and vanilla on medium-high speed to stiff peaks, 2 to 3 minutes.
  3. Fold about a third of the whipped cream into the mascarpone mixture to loosen it, then fold in the rest until smooth.
  4. Refrigerate for 30 minutes to firm up. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.

Tips

  • Chill the bowl and beaters for 10 minutes first; cold cream whips faster and holds its shape longer.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
  • Storage: Refrigerate the filling for up to 2 days. Keep filled doughnuts refrigerated and serve within 4 hours.
