Instructions
- In a large bowl, beat the mascarpone with half of the confectioners' sugar until completely smooth, about 1 minute.
- In a chilled bowl, whip the cold cream, remaining confectioners' sugar, salt, and vanilla bean paste on medium-high speed to stiff peaks, 2 to 3 minutes.
- Fold about a third of the whipped cream into the mascarpone mixture to loosen it, then fold in the rest until smooth.
- Refrigerate for 30 minutes to firm up. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.
