Kringle is a name used for pretzel-shaped sweet breads and pastries in Denmark, Norway and other Nordic countries. In Denmark, a kringle is a buttery laminated pastry, rolled and shaped into a large knot or pretzel and filled with remonce, a mix of butter, sugar and almond or marzipan, often with raisins, then topped with icing or nuts.
In the United States, the city of Racine, Wisconsin, settled by Danish immigrants, is famous for an oval ring-shaped kringle with many flaky layers and fillings such as pecan, raspberry and cherry. It was named Wisconsin's official state pastry in 2013. The pretzel symbol is also a traditional bakers' sign in Scandinavia.
