Also called: Danish pastry, wienerbrød
Danish dough, called wienerbrød in Denmark, combines the yeast of brioche with the butter layers of puff pastry, usually with egg and sugar in the dough. It is folded several times to build layers, shaped into pinwheels, braids or pockets, proofed and baked until golden.
Cream cheese, fruit, custard and almond fillings are common, often finished with a powdered sugar glaze.
