Make a classic vanilla glaze that sets glossy and thin, and fill doughnuts with pastry cream or jam.

Vanilla glaze

  • Whisk powdered sugar with water or milk and vanilla until smooth and pourable
  • Dip warm (not hot) doughnuts and let excess drip off
  • Set on a rack for 5–10 minutes until the glaze firms
  • For a thicker coat, dip a second time once the first layer sets

Fillings

Poke a hole in the side of unholed doughnuts with a skewer, then pipe in pastry cream, jam or lemon curd until the doughnut feels heavier.
