Ginger snap

A thin, crisp cookie flavored with ground ginger and often molasses, cinnamon and cloves, known for its snap when broken.

Also called: ginger cookie, gingersnap

Ginger snaps are made from a molasses-rich dough with a high sugar content, which helps them spread and bake up crisp and dry. The dough is often rolled into balls and coated in sugar, giving the cookies a crackled top.

Because they are so crisp, crushed ginger snaps make an excellent crust for cheesecake, pumpkin pie and icebox desserts, and crumbs add spice to ice cream toppings and crumbles. Softer, chewier versions are usually called ginger cookies or molasses cookies.
