Egg tart
A small tart with a pastry crust and a smooth, sweet egg custard filling, made in British, Portuguese and Hong Kong styles.

- Cakes, cookies, pastries and baked goods
- United Kingdom
Also called: egg custard tart
British custard tarts have a shortcrust base and a nutmeg-dusted custard. Hong Kong egg tarts, a dim sum and bakery favorite, have either a crumbly shortcrust or a flaky pastry shell and a glossy, bright yellow custard that is just set. Portuguese pastéis de nata have a caramelized, blistered top.
The custard is made from eggs, sugar and milk or evaporated milk, strained for smoothness and baked gently so it does not puff or crack. Egg tarts are best eaten warm on the day they are baked.
