Tartlet

A small, individual tart, usually a few inches across or bite-size, with a crisp pastry shell holding a sweet or savory filling.

Tartlets use the same doughs and fillings as full tarts, such as sweet shortcrust shells filled with lemon curd, pastry cream and fresh fruit, ganache or frangipane. Egg tarts and Portuguese custard tarts are well-known tartlets. They are popular for parties, dessert tables and afternoon tea.

Shells can be rolled and fitted into small tartlet pans or pressed into a mini muffin pan. Because they are small, shells bake much faster than a full tart, so start checking early and pull them when the edges turn golden.
