Also called: Dutch baby

A Dutch baby is made from a thin batter of eggs, flour and milk, similar to popover or crêpe batter. The batter is poured into a skillet that has been heated in the oven with butter, then baked at high heat. Steam from the eggs and milk makes it puff dramatically up the sides of the pan.

It starts to deflate as soon as it leaves the oven, leaving crisp, curled edges and a soft center. It is usually served straight from the pan with lemon juice and powdered sugar, or with fruit, syrup or whipped cream. It is related to the Yorkshire pudding and the German oven pancake.
