Chocolate tart
A tart with a crisp pastry shell filled with a smooth, rich chocolate filling, usually a set ganache or a baked chocolate custard.

- Cakes, cookies, pastries and baked goods
The shell is usually a sweet shortcrust or chocolate pastry, blind-baked until fully crisp. For the simplest filling, warm cream is poured over chopped dark chocolate to make ganache, which is poured into the shell and left to set. A baked version adds eggs to the ganache and bakes it gently until just set.
A good chocolate tart is silky and deep in flavor rather than very sweet. It is served in thin slices with whipped cream, crème fraîche, berries or a pinch of flaky salt.
