Cherry ice cream

Ice cream flavored with cherries, either as a cherry-tinted base or as a vanilla or chocolate base studded with cherry pieces.

Sweet or tart cherries can be used. Fresh cherries are pitted and usually cooked with sugar first, which concentrates their flavor and keeps the pieces from freezing into icy bits. Some recipes purée part of the fruit into the base and fold the rest in as chunks after churning.

Cherries pair well with almond, chocolate and vanilla. Cherry chocolate chunk is a popular combination. A splash of kirsch or almond extract strengthens the cherry flavor without making it taste artificial.
