Traditional strudel dough is soft and elastic. After resting, it is stretched by hand over a cloth-covered table until it is thin enough to see through. The dough is brushed with melted butter, sprinkled with buttered breadcrumbs that soak up apple juices, topped with the filling and rolled up by lifting the cloth.

The baked strudel is dusted with powdered sugar and usually served warm in slices, often with whipped cream, vanilla sauce or ice cream. Many home bakers use layered sheets of phyllo dough as a quicker stand-in for hand-stretched dough.
