Traditional strudel dough is a soft, elastic dough of flour, water, oil and a little salt, stretched by hand over a cloth-covered table until thin enough to read through. It is brushed with melted butter, filled with apples, raisins, cinnamon and buttered breadcrumbs, and rolled up using the cloth.

Apfelstrudel is famous in Austria; Hungarian rétes uses fillings such as poppy seed, cherry and sweet cheese. Phyllo is a common shortcut.
