Bayerischer Apfelstrudel (Bavarian Apple Strudel)
Bavarian apple strudel wraps cinnamon apples, raisins and buttered breadcrumbs in paper-thin pulled dough, then bakes the rolls in a deep dish while milk and cream are poured over them. The top turns golden and crisp while the underside soaks up the sweet cream, giving a softer, juicier strudel than the Viennese kind. Makes 8 servings in about 3 hr 55 min.

Baking tools for this recipe

Instructions

  1. Make the strudel dough: mix the bread flour and fine salt, add the lukewarm water, neutral oil and white vinegar and knead until very smooth and elastic, about 8 minutes. Shape into a ball, coat thinly with oil, cover and rest at room temperature for at least 60 minutes.
  2. Prepare the filling: toss the tart apples with the lemon juice, granulated sugar, ground cinnamon and drained raisins. Melt 50 g of the unsalted butter in a skillet and toast the dry breadcrumbs over medium heat, stirring, until golden, 3 to 4 minutes; let cool, about 1 hour.
  3. Heat the oven to 375°F (190°C). Brush the baking dish with some of the remaining melted butter.
  4. Lay a large cloth (about 30 x 40 inches / 75 x 100 cm) on the table and dust it with flour. Roll the dough out a little, then lift it over the backs of your hands and gently pull from the center outward, working around, until it is thin enough to read through and covers most of the cloth. Trim off the thick edges.
  5. Brush the dough with melted butter, sprinkle the toasted breadcrumbs over two-thirds of it, and spread the apple mixture on top of the crumbs, leaving a 2-inch (5 cm) border. Fold in the sides, then lift the cloth to roll the strudel up loosely from the filled end.
  6. Cut the roll in half crosswise and place both pieces seam side down in the dish. Brush with the rest of the melted butter.
  7. Whisk the whole milk, heavy cream and vanilla sugar together. Bake the strudel for 20 minutes, then pour half the milk mixture around and over the rolls and bake 15 minutes more.
  8. Pour over the remaining milk mixture and bake until the top is deep golden and crisp, the apples are tender when pierced, and most of the liquid has been absorbed into a thick creamy layer, 20 to 25 minutes more.
  9. Let rest 10 minutes, dust with the powdered sugar, and serve warm, cut into thick slices with some of the creamy liquid from the dish.

Tips

  • Warm, well-rested dough stretches easily; if it springs back, cover it and wait 10 minutes more.
  • Small holes in the dough do not matter once it is rolled; patch big ones with trimmed edges.
  • Use firm, tart apples so the slices keep their shape in the cream.
  • Good with coffee or vanilla sauce.

Recipe FAQ

How long does it take to make bayerischer apfelstrudel (bavarian apple strudel)?

Plan on 50 minutes of prep and 55 minutes of cooking, plus 2 hours 10 minutes to rest. The recipe makes 8 servings.

How should I store bayerischer apfelstrudel (bavarian apple strudel)?

Refrigerate leftovers, covered, for up to 2 days. Reheat at 325°F (160°C) for 15 minutes.

Can I make bayerischer apfelstrudel (bavarian apple strudel) ahead?

It is at its best the day it is made; prepare it a few hours before serving.

Can I use a different form of vanilla?

Yes. This recipe uses 2½ tsp vanilla sugar, or 10 g sugar plus 1/2 tsp vanilla extract (10 g). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.

In Bavaria the apple filling is rolled in hand-pulled strudel dough as in Vienna, but the strudel is baked in a high-sided dish and basted with milk or cream while it bakes, which makes it especially moist. Serve it with coffee or vanilla sauce.

Variations

  • Mini portions: cut the roll into 4 pieces and bake in two 8-inch (20 cm) square dishes; total baking time 45 to 50 minutes.
  • Cinnamon-sugar crust: sprinkle the buttered rolls with 25 g (2 tbsp) sugar mixed with 1/2 tsp (1 g) cinnamon before baking; time unchanged.
  • Shortcut dough: use 12 sheets of thawed phyllo (about 250 g), brushed with butter and stacked in two piles of 6, filling half the apples into each; bake 45 minutes total.
