Syrniki are a favorite breakfast in Ukraine, Russia, Belarus and other Eastern European countries. They are made from tvorog, a fresh, dry, crumbly cheese similar to farmer's cheese. The cheese is mixed with egg, sugar and just enough flour or semolina to hold it together, then shaped into small patties and pan-fried in butter or oil.

They are crisp outside and soft and tangy inside. Raisins, vanilla or lemon zest are often added. Draining the cheese well keeps the patties from spreading.
