Instructions
- In a large bowl, whisk together the flour, salt, and oil. Gradually add the warm water and mix with a wooden spoon or your hands until a rough dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Shape into a ball, coat lightly with oil, cover with plastic wrap, and let rest at room temperature for 30 minutes.
- While dough rests, prepare the filling. In a large bowl, mix thinly sliced apples with sugar, cinnamon, vanilla extract, and chopped toasted walnuts. Set aside to macerate while you prepare the strudel dough.
- Preheat oven to 375°F (190°C). Melt 2 tablespoons of the butter and set aside for brushing.
- On a large clean linen or kitchen towel dusted with flour, roll the dough out as thin as possible, then gently stretch it with your hands over the work surface, working from the center outward. The dough should become almost translucent, about 20 by 30 inches in size.
- Brush the stretched dough evenly with half of the melted butter, then sprinkle the toasted breadcrumbs evenly over the surface. The breadcrumbs will absorb excess moisture from the filling and keep the dough crisp.
- Spread the apple-walnut mixture evenly over the breadcrumbs, leaving a 1-inch border all around.
- Using the towel to help, carefully roll the dough from the long edge nearest you, tucking the filling in as you go, to form a tight log. Pinch the ends and seam to seal well.
- Transfer the strudel carefully to a large baking sheet lined with parchment paper, seam side down. Brush the top with the remaining melted butter to encourage a golden crust.
- Bake for 40-45 minutes until the strudel is golden brown and crisp. If the crust browns too quickly, tent loosely with foil after 30 minutes.
- Remove from oven and let cool for at least 15 minutes before slicing to serve warm or at room temperature.
Tips
- When stretching the dough, work gently to avoid tearing; if the dough rips, patch it with a bit of flour and dough and continue stretching.
- Use a vanilla bean paste or scrape seeds from one vanilla bean for a more pronounced vanilla flavor in the filling if desired.
