Instructions
- In a large mixing bowl, combine the flour, salt, and neutral oil. Gradually add the warm water while stirring until a shaggy dough forms.
- Turn out the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Shape into a ball, wrap in plastic, and let rest at room temperature for 15 minutes.
- While the dough rests, toast breadcrumbs in a dry skillet over medium heat until golden and fragrant. Set aside to cool.
- In a medium bowl, mix the sliced apples, sugar, ground cinnamon, raisins, and the seeds scraped from the vanilla bean pod until evenly combined.
- Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.
- On a large clean kitchen towel dusted with flour, roll out the dough into a thin rectangle about 12x16 inches. Gently stretch the dough with your hands from the center outward until it is very thin and nearly translucent, about 14x20 inches or larger. Take care not to tear the dough.
- Brush the melted butter over the stretched dough surface evenly. Sprinkle the toasted breadcrumbs over the dough, leaving a 1-inch border on all sides.
- Spread the apple and raisin filling evenly over the breadcrumbs.
- Using the towel to help, carefully roll the dough from the short edge into a tight cylinder, sealing the edges by pinching gently. Transfer the strudel seam-side down to the prepared baking sheet.
- Brush the strudel top with the remaining melted butter.
- Bake for 35-40 minutes, or until the strudel is golden brown and crisp on top.
- Remove from the oven and let cool for 10 minutes before slicing to serve.
Tips
- Stretch the dough gently and evenly for a thin pastry that crisps well without tearing.
- Use a vanilla bean for a deep, natural vanilla flavor that complements the apples and raisins.
