Spooning and leveling
Spooning and leveling is a way of measuring dry ingredients such as flour: you spoon them lightly into a measuring cup and scrape the top flat.

- Techniques and preparation methods
Also called: spoon and level
Flour packs down in its container. If you dip a measuring cup straight into the bag, you press extra flour into the cup and end up with more than the recipe intends, which can make cakes and cookies dry and heavy.
The spoon-and-level method avoids this. Use a large spoon to move it into a dry measuring cup until the cup is overflowing, without shaking or pressing it down. Finally run the flat side of a knife across the rim to scrape off the extra, ideally over the flour container or a sink so spills are easy to manage.
The same approach works for other dry ingredients that pack down in their containers. Many bakers skip cups altogether and weigh ingredients on a scale for even more consistent results.
