Semifreddo means half-cold in Italian. A light base of whipped egg yolks and sugar, or of meringue, is folded with whipped cream and flavorings such as nuts, coffee, chocolate or fruit. The air beaten into it keeps the dessert soft enough to slice straight from the freezer.

It is usually frozen in a loaf pan lined with plastic wrap, then turned out and cut into slices. It is served with a sauce, fresh fruit or crushed cookies, and it is a good choice for anyone without an ice cream maker.
