Scraper finish

A scraper finish is a frosted cake surface smoothed or textured by dragging a bench scraper or offset spatula around the sides.

Scraper finish: A round buttercream cake with perfectly smooth, straight sides and a sharp top edge made with a scraper.
  • Techniques and preparation methods

A scraper is a flat piece of metal or plastic with a straight edge. After a cake is covered with icing, the scraper is held against the side while the cake turns on a stand, which levels the icing into a smooth surface.

A culinary school guide to cake decorating techniques says to use an offset spatula or a bench scraper to level the icing. The same tools can leave a textured pattern, such as ridges, if the scraper has a notched edge or is moved in a particular way.

It is a quick finish that needs few supplies, and the clean lines suit both plain cakes and cakes that will be decorated with piping or fresh flowers on top.
