Also called: Blackpool rock, Brighton rock
Rock is a boiled sugar sweet sold in long cylindrical sticks, mostly at British seaside resorts. Sugar and glucose syrup are cooked to a high temperature, poured onto a slab and worked by hand. Part of the mass is pulled on a hook until it turns white and airy for the center, while colored portions form the outer casing and the lettering.
The letters are built from strips of colored candy laid into the large warm block, which is then rolled and stretched into thin sticks so the design runs from end to end. The sticks are cut to length while still warm. Rock is very hard and is usually sucked rather than bitten.
