Also called: lolly, sticky-pop, sucker

Homemade lollipops are made from sugar, corn syrup and water cooked to the hard-crack stage, about 300 to 310°F (149 to 154°C), measured with a candy thermometer. Corn syrup helps keep the sugar from crystallizing, so the candy stays clear and glassy. Flavoring and color are stirred in after the syrup comes off the heat.

The hot syrup is poured into molds or onto a silicone mat over sticks and left to harden. Humidity makes hard candy sticky, so finished lollipops should be wrapped individually. Isomalt is often used for very clear decorative pops.
