Pecan pie
A Southern American pie with a sweet, gooey filling of eggs, sugar, butter and corn syrup, packed with pecans.

- Cakes, cookies, pastries and baked goods
- United States
The filling is a custard set by eggs; corn syrup keeps it smooth and stops the sugar from crystallizing. Toasting the pecans first deepens their flavor. The pie is baked at about 350°F (175°C) until the edges are set and the center jiggles slightly, then cooled for several hours to firm up.
Shielding the crust edge with foil or a pie shield keeps it from over-browning during the long bake.
