Oatmeal raisin cookie
A chewy drop cookie made with rolled oats, raisins, brown sugar and warm spices such as cinnamon.

The dough is made by creaming butter with brown and white sugar, adding eggs and vanilla, then mixing in flour, leavening, cinnamon, rolled oats and raisins. Brown sugar keeps the cookies moist and chewy, and soaking the raisins briefly in hot water keeps them plump.
Old-fashioned rolled oats give more texture than quick oats. Chilling the dough before baking helps keep the cookies thick. Popular variations swap raisins for dried cranberries, chocolate chips or walnuts.
