Meringue powder
A shelf-stable powder of dried egg whites, sugar and stabilizers that replaces raw egg whites in royal icing, meringues and frostings.

- Baking ingredients and additives
Mixed with water, meringue powder whips up like fresh egg whites but is more consistent and does not need raw eggs. Its main use is royal icing for decorating cookies and assembling gingerbread houses, where it dries hard and stable.
A spoonful can also help buttercream and whipped cream hold their shape. Because it already contains sugar and stabilizers, it is not an exact match for plain dried egg white, and recipes written for one may need adjusting for the other.
