  • 1.0 cup (200.0 g)granulated sugar
  • ⅓ cup (109.0 g)light corn syrup
  • ½ cup (120.0 ml)water
  • ½ tsp (2.5 ml)candy flavoring oil, or 1 teaspoon extract

Instructions

  1. Lightly oil lollipop molds and add sticks.
  2. In a heavy saucepan, stir the sugar, corn syrup, and water over medium heat until the sugar dissolves. Wash down the sides of the pan with a wet pastry brush.
  3. Clip on a candy thermometer and boil without stirring to 300°F (hard-crack stage), 15 to 25 minutes.
  4. Remove from the heat, let the bubbles subside, and carefully stir in the flavoring (it steams).
  5. Pour into the molds and let harden completely, about 30 minutes.

Tips

  • Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
  • Hot sugar causes serious burns; keep children and pets away from the stove while it cooks.
  • Storage: Wrap individually and store airtight at room temperature for up to 1 month; humidity makes hard candy sticky.
