Hallongrottor, Swedish for raspberry caves, are made from a short, crumbly dough of flour, butter, sugar and vanilla, often lightened with a little potato starch and baking powder. The dough is rolled into small balls and set in paper baking cases, a hollow is pressed into the center of each one, and the hollow is filled with raspberry jam before baking. In the oven the cookie spreads slightly and the jam melts into a glossy pool.
They are a classic of Swedish fika, the coffee break, and of the kafferep, the traditional coffee party where hosts set out several kinds of cookies. Similar jam-filled cookies are known in the United States as thumbprint cookies.
