Fondant
A smooth, pliable sugar dough that is rolled into thin sheets and draped over cakes for a clean, porcelain-like finish, also used to model decorations.

- Fillings, creams, frostings and sauces
Also called: fondant icing
Rolled fondant is made mostly from powdered sugar with corn syrup or glucose, gelatin or gum, and a little fat or glycerin to keep it workable. It is kneaded until supple, rolled to about 1/8 inch (3 mm), then laid over a cake that has a firm coat of buttercream or ganache underneath.
Fondant dries out quickly, so unused pieces should stay tightly wrapped. Humidity and fridge condensation can make it sticky. Poured fondant is a different product: a thin, glossy icing for petits fours and éclairs.
