The Brussels waffle is the rectangular, generously sized waffle that is a classic street food of Belgium's capital. Visit Brussels says it usually has 20 to 24 holes, which is a reliable way to recognize one. It is crispy outside and dusted with icing sugar, while the inside is light as air, soft and fluffy with a subtly flavored center.

Visit Flanders describes it as a feathery-light yeast waffle, where the yeast gives an airy texture and a crisp exterior when freshly baked. Earlier Flemish waffles were rectangular and thick with deep holes, and the Brussels name came later when a Ghent baker sold this style under it.

It is traditionally eaten with just icing sugar, though whipped cream is a common topping, and in America it was popularized at the 1964 New York World's Fair, often served with whipped cream and strawberries.
