Baking Time Adjustment Estimator
Changing pans changes the baking time. Enter the recipe's pan and time and the pan you're using, and get an estimated time range, when to start checking and how to tell it's done.
How to use it
- Choose the recipe's pan, how many, its baking time and temperature.
- Choose your pan, and whether you scaled the recipe to fit or are using the same batter.
- Start checking at the time shown and use the doneness tests; switch on convection if you're using a fan oven.
How it works
How fast the center of a cake heats depends on how far the heat has to travel: the batter's depth, and for narrow pans like loaves and Bundts, the distance to the walls. The estimator compares the two pans with a heat-conduction model (slab and cylinder heating) and scales your recipe's own time.
It's calibrated on typical bake times: 9-inch layers 25 to 30 minutes, a 9x5 loaf 55 to 65, cupcakes 18 to 22, a 12-cup Bundt 55 to 60.
Assumptions: these results are estimates
- These are estimates, not guarantees: ovens, pan color and material, and the batter itself all change the real time.
- The same oven temperature is assumed unless you switch to convection (25°F lower, about 10% faster).
- For pans over 2¼ inches of batter, a slightly lower oven and a longer bake gives more even results.
Tips
- Check at the start of the range, then every 3 to 5 minutes.
- An instant-read thermometer takes out the guesswork: 205 to 210°F in the center of most cakes.
- Tent deep cakes with foil if the top browns before the center sets.

Questions
How long do I bake cupcakes from a cake recipe?
Usually 18 to 22 minutes at 350°F for standard cupcakes, 10 to 14 for minis, compared with 25 to 35 minutes for most layer cakes.
How long does a Bundt cake take compared with layers?
About twice as long: a recipe that bakes 28 minutes in two 9-inch rounds takes roughly 55 to 65 minutes in a 12-cup Bundt.
Should I lower the oven temperature for a bigger pan?
For deep pans, many bakers lower it by 25°F and bake longer so the edges don't dry out before the middle sets.
How do I know when a cake is done?
A toothpick comes out clean or with a few moist crumbs, the top springs back, and the center reads 205 to 210°F.
