How it works
Volume and weight are linked by density, and every ingredient packs differently. A cup of all-purpose flour weighs 120 g; a cup of granulated sugar weighs 198 g; a cup of brown sugar, packed, 213 g.
Dry and soft ingredients use King Arthur Baking's ingredient weight chart, the reference most American recipe writers use. Liquids and fats use their measured densities, so a US cup (236.6 mL) of water is 237 g and of milk 244 g.
In recipe mode, the tool reads each line, finds the amount, the unit and the ingredient, and converts it. Lines it can't weigh stay as written so nothing is lost.
Assumptions and limits
- Flour is spooned into the cup and leveled, not scooped from the bag, which packs in up to 25% more.
- Brown sugar is firmly packed; confectioners' sugar is spooned in unsifted.
- Ingredient densities vary by brand and humidity by a few percent; weigh when a recipe is critical.
Tips
- Set your scale to zero with the bowl on it and weigh each ingredient straight in: fewer cups to wash.
- For small amounts of leaveners and salt, measuring spoons are more accurate than most kitchen scales.
- Copy the converted recipe and keep it: grams make doubling or halving trivial next time.

How many grams are in a cup of flour?
120 grams of all-purpose flour, spooned and leveled. Bread flour and cake flour are also about 120 g; whole wheat is about 113 g.
How many grams is a cup of sugar?
198 grams of granulated sugar. Packed brown sugar is 213 g per cup and confectioners' sugar about 113 g.
Why do my recipes give different gram weights for a cup?
Writers measure differently: some scoop, some spoon, some use 125 g or 130 g for flour. If a recipe lists grams, use its grams; this tool gives the standard spooned weight.
Is a US cup the same as a metric cup?
No. A US cup is 236.6 mL; a metric cup (Australia, Canada) is 250 mL. This converter uses US cups.
