Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, tapping out excess flour.
- In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt until well combined.
- In a large bowl, beat the softened butter and brown sugar with a mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract and grated fresh ginger.
- Mix the molasses into the hot brewed tea until combined. Gradually add the molasses tea and the dry ingredients alternately to the butter mixture, beginning and ending with the dry ingredients. Stir just until combined; do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Remove from oven and let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Tips
- For a stronger vanilla flavor, replace the vanilla extract with 1 vanilla bean, split and scraped, mixed into the wet ingredients.
- If molasses is unavailable, dark brown sugar can be increased by 2 tbsp and substituted for part of the granulated sugar for similar flavor.
