How it works
Pans are compared by how much they hold. Volumes come from standard pan charts (Joy of Baking's for most US pans) and from geometry for custom sizes.
If you don't scale, the same batter sits deeper or shallower in the new pan. The tool shows by how much and estimates the new baking time, because depth is what changes it most.
It also lists other pans that hold about the same, handy when you don't own the one the recipe asks for.

- Pan volumes are to the rim; real pans vary up to 10% by brand and side slope.
- Cake batter fills a pan about halfway (loaf and Bundt pans about 60%).
- Baking times are estimates; check for doneness early.

- Measure any pan exactly: fill it with water from a measuring cup and count.
- Pans within about 15% of each other usually work without scaling; just watch the time.
- Dark pans bake faster than light aluminum: lower the oven 25°F for dark pans.

How do I convert a recipe from an 8-inch to a 9-inch pan?
A 9-inch round holds about a third more than an 8-inch. Multiply the recipe by about 1.3, or keep it and expect a thinner cake that bakes faster.
How much batter for a Bundt pan?
A 10-cup Bundt takes about 6 cups of batter, a 12-cup about 7 cups. Fill Bundt pans about 60% full.
What size pan is the same as a 9x5 loaf pan?
An 8x8-inch square or a 9-inch round hold about the same as a 9x5 loaf, though they bake much faster because the batter is shallower.
